This is the one that started it all.
It had been some years that I was making homemade hazelnut chocolate spreads, testing, and tweaking the recipe one iteration at a time. But it wasn’t until we were invited to dinner one winter night where we took a jar of this magic chocolaty, hazelnutty spread that our friends coined the name Facetella™.
Ingredients: Hazelnut (76%), 100% Dark Cacao (14%), Stevia & Erythritol, Bourbon Vanilla Extract, Salt
Homemade, all natural, high-quality ingredients, ZERO Sugar, ZERO preservatives, ZERO emulsifiers and ZERO Palm Oil or any other kind of oil. All the oil comes naturally from the Hazelnuts.
Unlike commercially known spreads, all the calories in our spread are nutrient dense calories coming exclusively from the nuts, Cacao, and Cacao Butter. Our various spreads consist of between 76% to 84% nuts by weight, compared to 13% for their products.
Given that there are no emulsifiers, after a few days being left untouched, it is normal for oil separation and sedimentation to occur.
The chocolate we use is 100% Dark Chocolate from France. It has absolutely no sugar added. We do have another version of FacetellaTM available for those who wish to elevate their chocolate experience even higher. This is where Keith’s Pure Ceremonial Cacao come in. One of my favorite chocolates growing up was Kinder Bueno. A light chocolate coated wafer filled with a delicious white creamy spread. I don’t remember where I read it or who told me, but one day I learned that the filling was basically a white version of Nutella. And so, the experimentation began to recreate it at home. After a few misses, I decided to substitute the hazelnuts for Almonds. And as the French say, Voila! My wife gave it her seal of approval.
The spread, however, remained nameless until one fine afternoon, while talking with my parents, I shared with them my delicious new discovery. My dad immediately insisted it be named after my wife, and so, Leilatella was officially born.

Everything is better with Chocolate. Or so they say 😊. The C in the name is for Chocolate, as you might have already guessed. Personally, I cannot pick a favorite, I like both versions. Each one brings something different, one day I may feel like something chocolaty. Another day, it’s sweet Cacao Butter flavor that my body and soul crave.

With LunatellaTM, I had to learn the hard way that the old saying “Less is More” is a very wise saying.
At first, I wanted to create a pure Pistachio based spread. I think partly because the Incredible Hulk is my favorite superhero, “Hulk SMASH!” 😊. But the result was an overpowering Pistachio taste, so much so, that most of our friends who had happily volunteered to be tasters said that while the pistachio taste was clearly there, the experience was overwhelming.
The eureka moment came after I had experimented with another spread. I decided to convert LunatellaTM into a “mostly-Pistachio-based”. The result was exquisite to taste, without losing any of its Pistachio flavor or its green color. Adding Orange Blossom Water was just my way of giving homage to my Lebanese roots, and I must say, it does wonders to LunatellaTM as well 😊.

Naming LyloutellaTM was a headache. And appropriately so, since it is a mishmash of the names of our 3 nieces, whom whenever we meet, give us so much love and attention that we get headaches 😊
As with LunatellaTM, I started out with a pure Walnut test recipe. But the walnut flavor was too overpowering, I understood that I had to dial it down a notch. But how? Fortunately, this time I did not have to think on it too long. The immediate solution was to pour into the mix some leftover hazelnuts that were just sitting there on my kitchen counter. Two birds with one stone, my kitchen counter became less crowded, LyloutellaTM was born.
